Chicken Breasts are a great staple to have in the freezer. If you go to Sams or Costco, buy a pack of them, they usually come 2 to a sleeve and you can freeze them easily and thaw them quickly too. To thaw frozen chicken breasts, place in lukewarm water in the sink and thaw for 30 minutes.
To cook a chicken breast, place about 2 tablespoons of olive oil in a medium skillet over medium heat, brown on both sides for about 3 minutes per side and then turn the heat to low and let simmer for about 10 minutes until chicken is cooked through. You can also broil or grill the chicken too.
10 things to do with Chicken Breasts
1 Make a Caesar salad. Slice cooked breasts and combine with romaine lettuce, croutons, Parmesan and Caesar dressing. You can also make a wrap. Place all ingredients in a tortilla and roll up.
2 Grilled BBQ chicken. Grill chicken and baste with barbecue sauce during the last 5 minutes.
3 Grilled Chicken and Pineapple skewers. Cut chicken breasts into cubes and cut ½ pineapple into large chunks. Drizzle with lime juice or olive oil and grill for 12-15 minutes or until chicken is cooked through. Don’t cram the chicken and pineapple too close together, it will take forever to cook
4 Pecan Crusted Chicken: Mix 1/3 cup honey and 3 tablespoons honey in a small bowl. Spread 1 package of chopped pecans on a plate. Dip the chicken in honey mixture and then roll in the pecans. Bake at 400 for 12 minutes or until the chicken is cooked through.
5 Quick Chicken Noodle soup. Bake 2 chicken breasts and cut into chunks. Pour 2 cans of chicken broth in a medium saucepan. Add chicken chunks, 2 sliced and cut carrots and 2 pieces of celery, cut. Add 4 ounces dried pasta and let boil. Add salt and pepper and any other seasonings you have available.
6 Chicken Quesadillas. Bake chicken breast and cut into small pieces. Drain and rinse one can of black beans. Place large flour tortilla in a skillet coated with cooking spray and heat over medium heat. Add cut chicken, black beans and shredded cheese. Fold over and let brown, flip and brown the other side.
7 Rosemary Garlic Chicken. Place chicken breasts in a ziplock bag with ¼ cup olive oil, ½ teaspoon minced garlic and 1 tablespoon dried rosemary. Let marinate for 1 hour. Grill chicken.
8 Quick Stir-fry: Cut chicken into cubes and brown in a skillet with 1 tablespoon oil over medium heat. When cooked, remove to a plate. Add chopped broccoli and sliced carrots, ¼ cup water and sauté for 10 minutes or until steamed. Add more oil and water, if needed. Add chicken back to the skillet and drizzle with soy sauce. Serve with rice.
9 Pretzel crusted chicken. Mix 2 tablespoons brown mustard with 1 tablespoon oil in a medium bowl. Dip chicken in mustard mixture and then dredge in 1 cup of crushed pretzels. Bake at 375 for 15 minutes or until cooked through. Serve with mustard.
10 Quick Pasta Salad. Cook chicken breasts and cut into cubes. Cook 6 ounces of pasta, drain and place in medium bowl. Add chicken, 1 can of drained, sliced black olives and 1 cup shredded mozzarella cheese (or any cheese). Toss with ½ cup of Italian dressing.
