Cornflake Crusted Baked Chicken

Ingredients
  1. 2 boneless, skinless chicken breasts
  2. 1 large egg
  3. 1 cup of cornflake crumbs
  4. 1 tablespoon of olive oil
  5. ½ teaspoon paprika
  6. ½ cup prepared Ranch dressing
Instructions
  1. Preheat oven to 400 degrees.
  2. Cut the chicken breasts into thick strips and season generously with salt and pepper.
  3. In a small bowl, whisk egg with 2 tablespoons of water. In a large bowl, mix the cornflakes with oil, paprika and a dash of salt.
  4. Working with one piece at a time, dip the chicken in the egg mixture, then coat with cornflakes, pressing flakes to help them adhere. Transfer Coated pieces to a baking sheet coated with cooking spray.
  5. Bake chicken until golden brown and crisp, about 10-15 minutes, depending on the thickness. Serve with ranch dipping sauce.
Notes
  1. If you want the chicken extra crispy, broil for 5 minutes at the very end.

Bacon Wrapped Chicken (Gluten Free)

Ingredients
  1. 2 boneless, skinless chicken breasts
  2. ½ cup cream cheese
  3. 6 bacon slices
  4. 1 tablespoon butter
  5. 1 head broccoli
Instructions
  1. Cut each chicken breast into 3 strips. Top half of the chicken strips with a spoonful of the cream cheese then top with another chicken strip, to make a sandwich. Wrap 2 slices of bacon around each chicken strip.
  2. Cut the tough stems from the broccoli and steam in 2 inches of water over medium heat.
  3. In a large skillet, melt the butter over medium-low heat. Add the chicken strips and cook, turning frequently. Reduce heat to low and cover and cook chicken until no longer pink, about 15 minutes. Turn chicken pieces over occasionally as they cook. Serve with broccoli.

Pretzel and Dijon Chicken

Ingredients
  1. 2 boneless, skinless chicken breasts
  2. 1 cups hard pretzels
  3. 2 tablespoons canola oil
  4. 1/4 cup Dijon mustard
  5. 2 tablespoons water
  6. 1 tablespoons red wine vinegar
  7. coarse salt and freshy ground pepper, to taste
Instructions
  1. Preheat the oven to 400 degrees.
  2. Place the pretzels in a plastic bag and using a rolling pin, break them up. You should have coarse and fine crumbs. Place the chicken breasts between two sheets of plastic wrap and, using a mallet, pound thin.
  3. Transfer the crumbs to a large plate and set aside.
  4. In a small bowl, mix the oil, Dijon mustard, water, and vinegar and whisk until smooth. Season with salt and pepper. Reserve half of the mustard mixture.
  5. Using a spoon the Dijon mixture over both sides of the chicken. Next, dredge the chicken in the pretzel crumbs and transfer to a rimmed baking sheet.

Roast Beef Sandwiches with Pepper Jack

Ingredients
  1. ¼ cup of sour cream
  2. 1 tablespoon of Dijon Mustard
  3. 1 teaspoon horseradish sauce
  4. 2 French Rolls
  5. ½ cup shredded pepper jack cheese
  6. ½ pound of roast beef
  7. ½ bag of gourmet potato chips
Instructions
  1. Preheat oven to 350 degrees.
  2. Combine sour cream, mustard and horseradish. Split bread in half horizontally and spread sour cream mixture on the cut surfaces. Top bread bottoms with cheese and roast beef, replace bread tops and wrap sandwiches in foil.
  3. Bake for 25 minutes. Cut each sandwich in half and serve with chips.

Ingredients
  1. 1 15-ounce can of black beans
  2. 1 tablespoon butter
  3. 2 6-inch corn tortillas
  4. ½ cup of salsa
  5. ½ cup shredded cheddar cheese
  6. 2 large eggs
Instructions
  1. Preheat oven to 400 degrees.
  2. Heat beans in a medium saucepan over low heat or heat in the microwave. Add the butter to a medium skillet and heat over low heat. Lightly soft fry the corn tortillas, just until limp. Place the corn tortillas in a single row on a baking tray.
  3. Top the tortillas with a layer of beans, a layer of salsa and some shredded cheese.
  4. Place the tortillas in the oven and bake for about 5 minutes, until cheese is melted. While tortillas are baking, cook the eggs as desired, we like sunny side up! Take the tortillas out of the oven and top with egg.

Spaghetti Carbonara

  1. 8 ounces spaghetti
  2. 4 bacon slices
  3. 2 large eggs
  4. ½ cup shredded Parmesan cheese
  5. ¼ cup half and half
Instructions
  1. Set a large pot of water to a boil. In a large skillet, cook bacon over medium heat, stirring occasionally, until crisp 8-12 minutes; transfer to a paper-towel lined plate. Crumble.
  2. Add pasta and cook until cooked through but firm to the bite.
  3. Meanwhile, in a large bowl, whisk together eggs, Parmesan and cream. Set aside.
  4. Drain pasta and working quickly, add hot pasta to egg mixture. Add bacon, season with salt and pepper and toss to combine (heat from the pasta will cook eggs). Serve immediately sprinkled with additional Parmesan cheese.

Maple Pork Chops with Pineapple Garnish

Ingredients
  1. ¼ cup soy sauce
  2. ¼ cup maple syrup
  3. 2 bone-in pork chops
  4. ½ fresh pineapple
  5. 1 5.7 ounce box of couscous (herb flavored)
Instructions
  1. In a medium bowl, mix together the soy sauce and syrup. Place the pork chops in a bowl, toss to coat and marinate at least 20 minutes or longer.
  2. Preheat grill to medium-high. Core, peel and cute the pineapple (cheat sheet below) into large triangles and baste with the syrup.
  3. Cook couscous according to package instructions.
  4. Grill the chops over medium-high heat, basting often with marinade and turning once, about 3 minutes per side, while pork chops finish.
  5. Serve chops with pineapple and couscous.
