Using a slow cooker is a life-saving and money-saving tool, perfect for college students. Because most slow cooker recipes serve about 6-8 people and require a slow cooker, we don’t have slow cooker recipes on SUPP.  Here are some easy and inexpensive slow cooker recipes. 

Note: You can find inexpensive slow cookers at all discount stores. You don’t need all of the fancy gadgets on it, but we do recommend you get one with a removable liner so you can put it in the dishwasher.

 

Slow Cooker 8 Can Taco Soup

Ingredients
  1. 15 ounces black beans ( drained and rinsed )
  2. 15 ounces pinto beans ( drained and rinsed )
  3. 14 1/2 ounces tomatoes ( canned diced )
  4. 15 ounces sweet corn ( drained )
  5. 12 1/2 ounces chicken breast ( canned, drained )
  6. 10 3/4 ounces cream of chicken soup
  7. 10 ounces enchilada sauce ( green )
  8. 14 ounces chicken broth
  9. 1 ounce taco seasoning mix
  10. 1 cup shredded cheddar cheese
  11. 1 package flour tortillas
Instructions
  1. Spray slow cooker with non-stick cooking spray. Dump all the ingredients into slow cooker and stir together. Cook on low heat for 2-3 hours. Serve with shredded cheese and warmed tortillas.

Slow Cooker Shredded Beef Burritos

Ingredients
  1. 1 cup water
  2. 1 packet taco seasoning
  3. 1 white onion , chopped, reserve some for garnish
  4. 2 teaspoons garlic, minced
  5. 2 1/2 pounds beef brisket
  6. 1 teaspoon coarse salt
  7. 1/2 cup fresh cilantro, chopped
  8. 4 large flour tortillas
  9. 1 jalapeño pepper , chopped or sliced
  10. 1/2 cup shredded Mexican blend cheese
  11. 1/4 cup prepared chunky salsa, plus extra for garnish
Instructions
  1. Place the water and taco seasoning in the slow cooker and mix well. Add the onion and garlic and mix well.
  2. Trim fat from the brisket and rub salt into the meat evenly. Place the brisket in the slow cooker and top with cilantro. Cover and cook on low for 8 hours. Check to see if it shreds easily. If it doesn't, cook it another 1-2 hours.
  3. Remove the brisket from the slow cooker to a cutting board and let it cool slightly. Using 2 forks, shred the meat into bite-size pieces. Place back in the slow cooker to absorb the juices.
  4. Meanwhile, wrap the tortillas in a damp paper towel and heat in the microwave for 20-30 seconds. Fill the tortillas with shredded beef, jalapenos, cheese, and salsa. Garnish with any leftover toppings and top with sour cream if you have some on hand.

Ingredients
  1. 1 Box Spiral Pasta (uncooked but rinsed)
  2. 1 pound lean ground turkey
  3. 1 onion, chopped
  4. 2 cloves garlic, minced
  5. 1 green bell pepper, chopped
  6. 1 cup pepperoni
  7. 1/2 can of olives
  8. 16 ounces pizza sauce or pasta sauce
  9. 1/2 cup water
  10. 1 cup shredded lowfat mozzarella cheese
Instructions
  1. Spray crockpot with non-stick spray In a medium skillet over medium-high heat, brown the ground turkey with the onion, garlic and green bell pepper. Drain excess fat.
  2. Rinse pasta and place in the crock-pot with drained ground beef mix. Stir in olives and pepperoni. Pour Pasta sauce and 1/2 cup water over noodle mix. Stir again and make sure it is mixed well. Top with shredded Mozzarella. Cover and cook on low for 4-5 hours (no peeking).

Ingredients
  1. 4 skinless chicken breasts
  2. 2 cans condensed cream of chicken soup
  3. 1 cup salsa
  4. 2 cups frozen corn
  5. 1 (15 oz) can black beans, rinsed and drained
  6. 1 1/2 cups water
  7. 1 teaspoon cumin
  8. 1/2 teaspoon dried cilantro (optional)
  9. 1 cup cheddar cheese, shredded
  10. favorite toppings
Instructions
  1. Spray slow cooker with non-stick cooking spray. Place chicken into slow cooker.
  2. In a bowl, mix together cream of chicken soup, salsa, corn, black beans, water, cumin, and cilantro. Pour over chicken in slow cooker. Cook on low for 4-6 hours (or high for 2-3 hours).
  3. Remove chicken and shred using 2 forks. Put chicken back into slow cooker, add cheese, and let cook for 15 more minutes. Serve with your favorite fajita toppings (tomato, shredded cheese, avocado, sour cream, crushed tortilla chips, etc).

Ingredients
  1. 2 cups milk
  2. 1 1/2 cups water
  3. 2 Granny Smith apples , peeled, cored and cubed
  4. 1 cup steel cut oats (gourmet oats), uncooked
  5. 3 tablespoons brown sugar
  6. 1 1/2 tablespoons butter, softened
  7. 1/2 teaspoon cinnamon
  8. 1/4 teaspoon coarse salt
  9. cooking spray
  10. 1/4 cup maple syrup
  11. 1/4 cup chopped walnuts
  12. 1/4 cup raisins
Instructions
  1. Bring milk and water to a boil in a saucepan over medium-high heat, stirring frequently.
  2. Place the hot milk mixture, apple, oats, brown sugar, butter, cinnamon and salt in a slow cooker coated with cooking spray and stir well. Cover with the lid and cook on LOW heat for 5-7 hours or until the oats are tender.
  3. Spoon the oatmeal into individual serving bowls; top with maple syrup, walnuts and raisins.
Notes
  1. Make this overnight so it is ready in the morning!
  2. *Steel-cut oats are whole grain groats (the inner portion of the oat kernel) which have been cut into only two or three pieces. They are golden in color and resemble mini rice particles.
  3. How are they different from rolled oats? Rolled oats are oats that have been steamed, rolled, re-steamed and toasted. Due to all of this additional processing they have lost some of their natural taste, goodness and texture.
